Victoria has been busy in the kitchen making Mince Pies! Her Great Nan Horsley passed this pastry recipe down the generations which is now made by her and her family during the festive season.
You can make your own filling (recipe also included), or just buy a ready made jar of mince meat if you want to whip together a batch quickly!
Nothing beats a home made mince pie dusted with icing sugar and a cup of our favourite Christmas Tea, Spiced Citrus around a fire at this time of year!
Flaky Pastry Recipe:
- 250g Plain Flour
- 150g of Cold butter
- 150ml of cold water
- Pinch of salt
Sieve the flour and salt into a large mixing bowl, give the butter into four and portions on a plate. Put on quarter into the flour and rub in.
Mix to a pliable dough with cold water and turn out onto a floured board, knead well. Roll into an oblong.
Mark the pastry into three equal portions without cutting. Put the second portion over the top of the two-thirds, then fold the bottom third up over the middle and the top down over the other two - see picture to help understand!
Seal the open ends with your rolling pin and fold the pastry in half.
Roll out again into another oblong, and repeat the above steps adding in the remaining butter.
Roll once more and fold up as before and leave to cool for as long as possible.
Once chilled, roll out the pastry to approx 5mm thick, use a cookie cutter to cut the base of your pie, add these to your greased bun tin.
Add your homemade (or shop bought) mince meat to the pie.
Use a slightly smaller cookie cutter to create the lid of the pie, add these to the top and dampen the edges and seal firmly.
Bake for 15 minutes at 200’c
Finally remove your minces pies from the tray and sprinkle with Icing sugar straight out the oven.
Pop the kettle on, Spiced Citrus in teapot, brew tea, then finally sit back, relax and enjoy your Christmas evening!!
