What you'll need for the Bell Rock

150ml brewed Earl Grey Blue Flower
35ml gin
30ml honey simple syrup (recipe below)
fresh-squeezed lemon juice
2 sprigs of lavender


First, make a batch of honey simple syrup mixing 4 parts boiling water to 1 part honey. Stir until honey has dissolved and leave to cool.

Add all ingredients into a cocktail shaker, shake several times and strain into a glass.

Garnish with more lavender.
