To celebrate officially one of their favourite unofficial holidays, the guys at Copeland Gin have come up with a fab new cocktail - 'The Local' -  starting with our favourite Peppermint Tea, adding Rhuberry Gin and topping with the new & exciting, Belfast Made Long Bridge Ginger Ale...

What you’ll need
50ml Copeland Rhuberry Gin
35ml Peppermint tea-infused sugar syrup
6 Mint leaves
15ml Lime
Ginger Ale

To make the Suki Peppermint tea sugar syrup - in a saucepan, bring two cups of water to a boil. add the peppermint tea (about 10g loose, 2 tea pyramids) and allow to brew for 3 minutes. Remove the tea and add the sugar, stirring until it dissolves. Let the syrup cool; easy!

Method

  1. In your cocktail shaker, muddle the mint leaves and lime slices, add the lime juice and a healthy shot(s) of Copeland Rhuberry Gin
  2. Mix in your sugar syrup until it dissolves too, give it a good shake!
  3. Double strain and pour over ice into your cocktail glass of choice, garnishing each with a sprig of mint... straw & cocktail umbrella optional (encouraged!)
