So, this year Zoë and her sister Megan decided to make us Earl Grey Blue Flower Pancakes!

Suki Tea Earl Grey Blue Flower Pancakes

enough for 12 small pancakes

 ·         135g Self Raising flour

·         35g Caster Sugar

·         1 Egg

·         75ml Milk

·         2 Earl Grey Blue Flower Pyramids

·         Loose Leaf Earl Grey (if desired)


Preheat the oven to 120°C. In a small saucepan, bring the milk and the 2 tea pyramids to gentle simmer. Remove from the heat and let seep for 5 minutes. Sieve Flour into mixing bowl, add and mix in the sugar. When the milk Early Grey mixture is cool, remove the pyramids, making sure to squeeze out as much liquid as possible. Whisk the Earl Grey milk with the egg. Add the wet ingredients to the flour mixture, slowly and mix until smooth. I added ½ teaspoon Earl grey tea leaves at this point for decoration. Stir until just combined. Let batter sit for 10 minutes.


Heat up a non-stick frying pan over medium-low heat. Brush a thin layer of butter or oil on your pan. Drop the batter 1 ½ tablespoons at a time into the pan. Cook until tiny bubbles appear on the surface, about 2-3 minutes. Flip and continue cooking for 1-2 minutes. Keep the pancakes in the warm oven until you’re finished pancaking. Enjoy warm and be adventurous with you toppings!
