We are on to day 13 of our 2 week matcha challenge, only 1 more day to go! Today we are enjoying some tasty Matcha Coconut Cups.

What You'll Need

Matcha Cups

1 tbsp Matcha
10 ounces Dark Chocolate
1/2 cup Coconut Butter
1 tbsp Honey
Salt

Method

Line cupcake tin with parchment cups. Melt dark chocolate over medium heat, stirring constantly. We did this over a double boiler (in a bowl over pan of boiling water). Add a small amount to line the bottom of each of the parchment cups. Place in freezer for 5-10 minutes to set.

In a bowl, combine coconut butter, matcha, honey and a pinch of salt. Place 1 teaspoon of this mixture into the set cups from the freezer and top with remaining chocolate. Sprinkle the top with salt and refrigerate until set. Once set, enjoy!
