This herbal iced tea is very refreshing and a great alternative to cordial which makes it great for children! You can easily eliminate using black tea in iced drinks, if you prefer to not let your child have any caffeine so this is based on a lemongrass and ginger herbal infusion. Substitute the ginger for fresh pineapple if it's considered too spicy.

Cold Brew Thai Refresher Tea

What you’ll need for this Iced Tea

  • 3 tablespoons lemongrass & Ginger tea: Lemongass & Ginger herbal infusion has a natural sweetness with the liquorice content. Not that the taste of liquorice is apparent.
  • 1 part fresh ginger: Fresh ginger brings a zing to the mix.
  • 1 whole lemon, sliced (optional): If you have a lemon on hand it's usually very welcome in any iced tea.

Cold Brewing Method

Add all the ingredients to 1/2 cup hot water. Add honey while the mix is still hot and stir in if you wish to sweeten.Infuse for 10 minutes , stirring a couple of times and then strain. (A cafetière is handy for this)

Add to a serving glass full of ice, garnish and enjoy! Easy!
