Happy Pancake Tuesday! To celebrate we thought we would treat ourselves to some delicious Turkish Delight pancakes.
What You'll Need
Turkish Delight tea
110g plain flour
1 teaspoon salt
2 large eggs
2 tablespoons melted butter
Makes approximately 10-14 pancakes. Simply half or double ingredient measurements above according to how many you wish to make.
Add milk to saucepan and heat on low-medium temperature. Add 3-5 teaspoons of Turkish Delight tea to a tea sac or tea infuser. Place in milk and continue to gently heat for 5 minutes.
Squeeze tea sac with back of spoon, remove milk from heat and set aside.
Sieve flour and salt into a large mixing bowl. Make a well in centre of bowl and break 2 eggs into centre. Begin to whisk and mix together. Make sure all flour from around the edges of the bowl are whisked in too. Whisk until batter is smooth and the consistency of thin cream.
Melt 2 tablespoons of butter in pan and add to mixing bowl with batter along with Turkish Delight infused milk and chocolate chips, you can add as many or as little as you like. Stir butter, milk and chocolate chips in well.
Increase heat of pan to medium-high and a little more butter (approx. 1 teaspoon) to pan. Spoon roughly 2 tablespoons of pancake batter from bowl into hot pan and begin to cook. You can make them whatever size you like them best!
Leave to cook for a couple of minutes. You can lift the edge with your spatula to see if it has goldened or whether it needs longer. Once golden, flip!
When golden on both sides and cooked through place pancakes on a warmed plate and serve. Best enjoyed with a pot of your favourite SUKI tea! We went for a nice strong pot of Belfast Brew.
